Frank Hoffman of all-creatures.org on resistance to compassionate living in the church

In this episode, we talk with Frank Hoffman, retired minister and creator of all-creatures.org, a website dedicated to archiving and highlighting educational materials to assist both teachers and students in the furtherance of cruelty-free living.

Frank and his wife Mary have been vegan since 1987, and are actively involved in helping others to become aware of the health, compassionate, and environmental benefits of a vegan lifestyle.

For our Vegan Bite, we bring you a 10-minute recipe template created by nutritionist, dietitian, and chef Jeff Novick, which you can use to create a variety of quick and healthy meals.

And, of course, we highlight the latest News from the Vegan Frontier, let you know about vegan related happenings in and around Central Oregon, and more!

Frank and Mary Hoffman

Frank Hoffman, along with his wife Mary, operates The Mary T. and Frank L. Hoffman Family Foundation, whose objective is to promote through education the prevention of suffering and cruelty to any of God’s creatures, human or otherwise, including, but not limited to their diet, their health, and their living conditions. The Foundation also aims to promote through education the elimination of the use of animals in biomedical research and testing, their use as food, or their use for any and all commercial purposes; and to protect the environment so that no living beings suffer from its destruction or pollution.

Frank and Mary also support organizations with similar goals, and since 1998 have maintained an Internet Archival Library (at all-creatures.org) of educational materials to assist both teachers and students in the furtherance of cruelty-free living.

The Hoffmans have been vegan since 1987, and are actively involved in helping others to become aware of the health, compassion, and environmental benefits of a vegan lifestyle.

Vegan Bite:

Recipe from Jeff Novick, Nutritionist, Dietitian, and Chef

For a really quick and healthy meal, Jeff says you can put this together in 10 minutes.

Pre-cook two large potatoes

While the potatoes are cooking, put in a pan the following items:

    • 2 boxes Pomi tomatoes
    • 2 cans beans, any kind
    • 2 packages frozen vegetables of any variety
    • ½ bag frozen onions
    • Spices of your choice: curry powder, garlic, pepper, etc.

Heat over medium heat and when potatoes are almost done, chop and add to the rest of the mixture, and voilà—dinner is ready.

This is a template that you can use to make many different recipes. By varying the beans and vegetables and exchanging the potato for whole wheat pasta or brown rice you can make Italian or Mexican dishes, and even soup, by adding two boxes of water after you pour the boxed tomatoes in.
